Cherry blossom sea bream is famous as it is designated as one of Kumamoto’s spring delicacies. Grown in the sea in Amakusa where the current is strong, the sea bream has firm flesh with an excellent flavor. We serve the fish in Cherry Blossom Sea Bream Kaiseki from March to May.

Highly nutritious Sea Conger Eel

In season: June to September

Sea conger eel is called the golden conger eel in Amakusa and treated as a luxury food item. It is very nutritious – especially rich in collagen, and thus popular among health-minded customers. We serve this light and elegant fish in Sea Conger Eel Kaiseki from June to September.

Soft and tasty Local Octopus

In season: June to November

Octopus fishing is widely done in the surrounding sea area in Amakusa.
Our local octopus is sweeter and tastier than other normal octopus.
We grill (octopus steak), boil (boiled octopus), and cook with rice to serve for you.

Plump and fresh texture Japanese Tiger Prawn

In season: June to December

Oyano Town in Amakusa is well-known for cultivating Japanese tiger prawns which are regarded as Kumamoto’s prefectural fish.
Our local Japanese tiger prawns are bright in color. Their firm flesh and plump texture will stimulate your appetite.
We serve a variety of prawn dishes in Japanese Tiger Prawn Kaiseki from July to September.
